- 4 large bell peppers, any color
- 1 pound ground beef (or ground turkey, chicken, or vegetarian option)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 can diced tomatoes
- 1 teaspoon paprika
- Salt and pepper to taste
- Shredded cheese (optional)
Instructions:
1. Preheat oven to 375°F (190°C).
2. Cut off pepper tops and remove seeds and membranes.
3. Cook rice according to package instructions.
4. In a large skillet, cook ground beef and onion until browned.
5. Add garlic, paprika, salt, and pepper. Cook 1 minute.
6. Stir in cooked rice, diced tomatoes, and shredded cheese (if using).
7. Stuff each pepper with the meat and rice mixture.
8. Cover with foil and bake 25 minutes.
9. Remove foil and bake an additional 10-15 minutes or until peppers are tender.
