Chicken Steam Roast
Ingredients:
- Whole chicken(with skin, about 1.5 kg or 3.3 lbs): 1
- Yogurt: 1 cup (240g)
- Ginger-garlic paste: 2 tablespoons
- Lemon juice: 2 tablespoons
- Red chili powder: 1 tablespoon (adjust to taste)
- Turmeric powder: 1/2 teaspoon
- Cumin powder: 1 teaspoon
- Coriander powder: 1 teaspoon
- Gram masala powder: 1 teaspoon
- Salt: 1.5 teaspoons (adjust to taste)
- Black pepper powder: 1/2 teaspoon
- Butter: 2 tablespoons (for basting)
- Oil: 1 tablespoon (for marination)
- Fresh cilantro: for garnish (optional)
- Green chilies: 3-4 (for garnish, optional)
Instructions:
1. Prepare the chicken:
- Clean and pat dry the whole chicken. Make deep cuts or slits on the chicken to allow the marinade to penetrate.
2. Marinate the chicken:
- In a bowl, mix yogurt, ginger-garlic paste, lemon juice, red chili powder, turmeric powder, cumin powder, coriander powder, gram masala powder, salt, black pepper powder, and oil.
- Rub this marinade all over the chicken, making sure to get it into the slits. Let it marinate for at least 2-4 hours, or preferably overnight in the refrigerator.
3. Steam the chicken:
- Prepare a steamer or a large pot with a steaming rack. Add water to the bottom of the pot and bring it to a boil.
- Place the marinated chicken on the steaming rack, cover, and steam over medium heat for about 45-60 minutes, or until the chicken is fully cooked and tender. Make sure the internal temperature reaches at least 165°F (74°C).
4. Baste and roast:
- Preheat your oven to 400°F (200°C).
- Once the chicken is steamed, transfer it to a baking tray. Baste it with melted butter.
- Roast in the preheated oven for about 10-15 minutes, or until the skin is golden and crispy.
5. Garnish and serve:
- Garnish with fresh cilantro and green chilies, if desired.
- Serve hot with naan, rice, or a side of your choice.
